Where do y'all buy your bread? Any concerns about gluten? Why do Italians eat so much pasta but aren't as overweight as Americans? It can't just be about portion size?

As someone who did an almost Keto diet for years and still watches carbs and sugar and read a lot about carbs and sugar metabolism I will say that there are A LOT of confounding factors to glucose metabolism and metabolism in general. I can't speak to chemicals added to food but I will say there are a lot of things Italians or any population may do to aid in their digestion of glucose: walks after meals, alcohol/vinegar before and during meals, stress, sleep, resistant starch, food combinations, portion size (yes, calories matter), etc. Plus, long, long term changes to diet are often needed (basically, life style changes) to effect change in weight and health. RFK Jr for all his energy has often made claims that are more anecdotal rather than science based. With that said, the scientists have been compromised in this country as evidenced by what is allowed in our food and advice that has been given.
