If this was in the US and in public, she had ZERO right to demand he stop recording. But it looked like a restaurant, so this may not apply. If in a private location, she simply should have brought it to the attention of management after he refused. Still wouldn't have excused her "Karen" behavior. But many private businesses do prohibit video recording. Even public places like the DMV, court houses and police stations prohibit it, in addition to your pharmacy, hospital, doctor's offices, etc.
That said, why couldn't SHE move if she didn't like sitting "in his shot?" She could have asked nicely, he could have replied, "There's no assumption of privacy in public, so I may record who and where I choose," and left it at that. Many of his answers were bizarre. "Come sit next to me?" What? Dude, she's creeped out by you possibly recording her, I don't think she wants to sit next to you!
Jeez, both of 'em were strange.
