I'd guess it's done occasionally, but not as obviously as Green Bay did it. To make it less obvious, all you have to do is call a defensive play that is poorly suited to stop a run between the tackles.
And the offense has to really want to score, like when the game is tied as in that Den-GB Super Bowl. If the offense is already leading by a fair margin, they might do what Ott did and stop short of the goal line.
