A point many are missing on In and Out fries is that you always wind up with a basket of 1" long fries with a very few 2-3" fries mixed in. Good thing I don't eat there often with that in mind, but it such has you licking your fingertips if you like catsup with your fries or vice versa as the case often is.rkt88edmo said:

Light well is fine with me, and honestly, I don't mind the regular inNOut fries, they aren't high on my list, but they aren't inedible, and I'll take them over the highly processed fries of more other places (almost everywhere but FiveGuys)

I'll take In-n-Out fries every day of the week. They may not be as "perfect" (ie, processed, formed, and pre-cooked before being frozen) as the huge fast food chains, but there is something to be said for being able to watch them cut the fries from whole potatoes before frying them. They're made the way fries are supposed to be made.
The problem is that they are not made the way they are supposed to be made. They are made-to-order and that limits the washing off the starch, the texture of the inside on the first try, and the texture of the outside on the second fry and you end up with garbage fries that you could easily top at home.
They are cut, put in oil and taken out and put on your tray. It isn't more wholesome or real, it's just showmanship. Cutting it in front of you means you forego any ability to make a passable french fry, or you take an hour to fullfil the order.
Good fries are washed and cooked twice. The "processed" BS you are talking about is the logistics of washing and cooking them twice. McDonald's often owns the production of the potato and even pays farmers abroad to plant their varieties because it gives a long fry that is constantly around the world... It's a real potato, cut and cooked; They don't form them like a Pringle. 5 guys does it at the location, but they start well before opening since it takes so long. That's why in-and-out is the absolute worst fry you can possibly get in fast food. It is literally how an absolute novice home cook would make them. A good home cook can make a 5guys fry (or really any other ok to good fry). It isn't hard. It just takes time that they are unwilling to take.
